Quick Tips

  1. Size Matters: Try to keep the cauliflower florets as uniform in size as possible to help them cook evenly.
  2. Dry Before Dipping: Pat the cauliflower florets dry with paper towels before coating them to help the batter stick better.
  3. Don’t Overcrowd: Leave space between each floret on the grill pan to let them crisp properly.
  4. Test for Doneness: The cauliflower wings should be tender when pierced with a fork, but not mushy.

Ingredients

  • 1 tbsp canola oil
  • 1 head cauliflower
  • ¾ cup non-dairy milk unsweetened

Dry Rub

  • ¾ cup all-purpose flour
  • 2 tbsp cornstarch
  • 2 tsp onion powder
  • 1 tsp kosher salt
  • 1 tsp black pepper

BBQ Sauce

  • 1 ¼ cup ketchup
  • 2 tbsp yellow mustard
  • 1 tbsp apple cider vinegar
  • 1 tbsp brown sugar
  • ½ tsp onion powder
  • ¼ tsp liquid smoke

Instructions

  • Cut the cauliflower into quarters. Then, break the cauliflower down into florets, leaving a little bit of the stem intact to make each floret easier to pick up.
  • In a large bowl, combine the flour, cornstarch, onion powder, salt, and black pepper.
  • Pour the milk into a small bowl. Then, dip each cauliflower floret in the milk, before coating them in the dry mixture.
  • In a separate bowl, combine all the BBQ sauce ingredients. Taste and adjust seasonings as necessary.
  • Fire up your grill to medium heat, about 350°F (180°C). Heat canola oil on the grill pan placed on the grill grates.
  • Place the cauliflower on the grill pan and grill for 10 minutes, then flip and grill for another 5-10 minutes. Continue grilling until the cauliflower is slightly charred and tender.
  • Transfer the grilled cauliflower to a large bowl and add the BBQ sauce. Toss to coat, then serve warm.
